Native varieties are buckwheat noodles that have been rooted in the land for a long time and have not been breed-improved.It is hand-made buckwheat noodles made with buckwheat flour that is ground with a stone mill, coarsely ground and finely ground, and then beaten with 100% buckwheat flour that matches the good seasoning.
